Method
- Heat olive oil in a large skillet over medium heat. Add onion and garlic, cook 2-3 minutes until softened.
- Add ground turkey and cook, breaking it up, until no pink remains.
- Stir in chili powder, cumin, smoked paprika, garlic powder, oregano, salt, and pepper.
- Add black beans, corn, and diced tomatoes. Simmer about 10 minutes until slightly thickened.
- Stir in lime juice and cilantro. Serve over rice, in tortillas, or in bowls with toppings.
Notes
- Storage: Refrigerate up to 4 days; freezes well up to 3 months. Great for meal prep.
- Swap: Ground chicken works as a direct substitute.
