Classic Avocado Toast

The two-minute version — mashed avocado, flaky sea salt, red pepper flakes, and a drizzle of olive oil. Simple and exactly right.

Ingredients
  

Toast
  • - 1 slice thick-cut sourdough bread
Avocado Base
  • - ½ ripe Hass avocado
  • - 1 tsp fresh lemon juice
  • - pinch of flaky sea salt plus more to taste
Toppings
  • - ¼ tsp red pepper flakes
  • - 1 tsp extra-virgin olive oil
  • - small handful of microgreens

Method
 

  1. Toast the bread until golden and firm.
  2. Scoop avocado into a small bowl. Add lemon juice and salt. Mash with a fork,
  3. leaving it slightly chunky.
  4. Spread the mashed avocado over the toast.
  5. Top with red pepper flakes and microgreens. Drizzle with olive oil and finish
  6. with another pinch of flaky salt.

Notes

  • Storage: Best eaten immediately. Mashed avocado can be stored with plastic
    wrap pressed directly on the surface for up to a few hours.
  • Make ahead: Not recommended — toast softens and avocado browns.
  • Swap: Swap microgreens for arugula; swap red pepper flakes for everything
    bagel seasoning.
