Cherry Tomato & Sprout Avocado Toast

Ingredients
  

Toast
  • - 1 slice thick-cut sourdough or whole grain bread
Avocado Base
  • - ½ ripe Hass avocado
  • - 1 tsp fresh lemon juice
  • - pinch of salt
  • - pinch of black pepper
Toppings
  • - ⅓ cup cherry tomatoes halved
  • - small handful alfalfa or broccoli sprouts
  • - 1 tsp extra-virgin olive oil

Method
 

  1. Toast the bread until golden.
  2. Mash avocado in a small bowl with lemon juice, salt, and pepper. Leave slightly chunky.
  3. Season the halved cherry tomatoes with a small pinch of salt and let sit for 30 seconds.
  4. Spread avocado on toast, pile on the cherry tomatoes, top with sprouts, and drizzle with olive oil.

Notes

  • Storage: Assemble fresh; best eaten immediately.
  • Make ahead: Not recommended.
  • Swap: Swap sprouts for microgreens; add a pinch of red pepper flakes for
    heat.
